Use the latest schema `1.6.0` available on winget-pkgs.
The new schema supports some new fields, but they do not affect
goreleaser. Hence, this PR is safe to merge, like
https://github.com/goreleaser/goreleaser/pull/4298 was 👍🏻
This adds missing fields:
- LicenseURL
- CopyrightURL
- Tags
As well as make several more fields templateable.

mimic the structure to be created in the target repo, and put each of
them in its own folder.

this will add support to winget into goreleaser.
Basically, the plan is:
- we generate the 3 needed yaml files
- we commit them to a repo
and that's it.
Initially, will probably have limited options support, and will only
have the default locale.
