versioned all new options since v1.2 (late 2021).
Should be enough to fix#3317 for now.

`cosign sign` complains with the following error when using `--output`
⨯ release failed after 14.73s error=sign: cosign failed: exit status 1: WARNING: the '--output' flag is deprecated and will be removed in the future. Use '--output-signature'

Since multiple filenames for the config file are allowed, we find several different usages of the file names in the docs:
- .goreleaser.yml
- goreleaser.yml
- .goreleaser.yaml
- goreleaser.yaml
I find that using a single filename in the docs is more intuitive for new users. Hence I replaced all occurrences of the filename with `.goreleaser.yml`.
